Values vary from batch to batch. Here are the orders of magnitude and, above all, the allergen information that really matters.

Orders of magnitude

Like any pressed, dry cheese, donkey cheese is concentrated: most of the water has been removed, which mechanically raises the protein, fat and salt content per 100 g. The exact figures for the batch you receive are printed on the label.

  • Protein: high, typical of a pressed paste.
  • Fat: depends on the goat's milk share of the blend.
  • Salt: present, since salting is part of preservation.
  • Lactose: residual, but present.

Allergens and intolerances

The product contains milk and milk proteins. It is therefore unsuitable for anyone allergic to goat or donkey milk proteins. It also contains residual lactose. If you have an allergy or an intolerance, ask us for the full batch label before ordering.

No health claims

A great deal is written about donkey milk. We stick to Swiss regulation: a health claim may only be used if it is authorised. We therefore do not present this cheese as a therapeutic product, but as what it is — a rare and flavourful food.
